The guide with the exact broth-to-rice ratio, the real cooking times and the tricks to make lobster soupy rice come out creamy and not watery. Recipe for 4 with homemade step-by-step fumet.

Soupy lobster rice is the Sunday dish that separates those who understand rice from those who think it’s enough to add more water to a paella. It is not a paella with soup. It is not a risotto. It is something else: a rice eaten with a spoon, with the grain loose but enveloped in a broth thickened by the starch and the coral of the crustacean. And, above all, it is a dish that lives or dies on two decisions: how much broth you add and when you turn off the heat.

This is the recipe I have been refining at home for years, with the proportion measured in a jug and the timer on the counter. No “cover and pray”. If you follow the ratios, it works.

What is soupy rice (and how does it differ from creamy or dry rice)

All three are cooked the same way at the start, but they differ in the final hydration. This is the reference I use at home:

Type of rice Broth:rice ratio Final texture How it is eaten
Dry (paella) 2:1 to 2.5:1 Loose grain, no broth Fork
Creamy 3:1 Creamy, thickened broth Fork or spoon
Soupy 4:1 to 4.5:1 Grain surrounded by broth Spoon, mandatory

For the soupy lobster rice the ratio that works is 4.5 parts broth to 1 part rice by volume. If you use a scale: 100 g of rice requires 450 ml of fumet. Not one more, not one less, if you want the creamy point right for eating with a spoon without it sticking to the walls of the plate.

The lobster: fresh, frozen and how to handle it

European blue lobster (more expensive, more flavour) or Canadian (cheaper, softer meat). For home cooking, the Canadian one is more than enough if the budget does not stretch to blue. Live whenever you can: the meat is firmer and the coral keeps its colour.

Ideal weight: 500-600 g per lobster, one for every two diners. Before cutting it up, half an hour in the freezer so it does not suffer (and neither do you). You split it with a heavy knife: head in half lengthways, body into 2 cm medallions with the shell, claws with a sharp blow to crack them without destroying the meat.

Reserve the coral and the juices from the head. That is where 70% of the flavour of the dish lies.

Ingredients for 4 people

  • 320 g bomba rice (DOP Arroz de Valencia or DO Calasparra)
  • 1,440 ml lobster fumet (see below)
  • 2 lobsters of 500-600 g
  • 1 onion medium (150 g)
  • 2 garlic cloves
  • 1 Italian green pepper (100 g)
  • 2 ripe tomatoes grated (200 g of pulp)
  • 80 ml brandy (a Lepanto or a Soberano will do)
  • 100 ml dry white wine
  • 1 bay leaf
  • Saffron threads (a generous pinch, about 15-20 threads) toasted
  • 1 teaspoon sweet DOP pimentón de la Vera
  • EVOO (about 60 ml)
  • Salt

The bomba rice is non-negotiable here. It absorbs a lot of liquid without overdoing it, holds its shape on the plate and does not split. A J. Sendra or a Bahía will also work, but they are less forgiving of an extra minute.

The fumet: the base that changes everything

A soupy rice does not accept stock from a carton. I’m sorry. The fumet is made while you prepare everything else; in 40 minutes you have 1.5 litres.

For the fumet (yields 1.5 L):

  1. In a pot, brown the lobster heads and shells (not the meat) with a splash of EVOO, 5 minutes over high heat. Crush the heads with a pestle to release their juices.
  2. Add 1 leek, 1 carrot, half an onion and 1 celery stalk in large pieces. 5 minutes more.
  3. Flambé with 50 ml brandy (off the heat, ignite and return to the heat).
  4. Cover with 1.8 litres of cold water, bay leaf, a few peppercorns and a split head of garlic.
  5. Simmer for 30 minutes over medium heat, without letting it boil vigorously (it turns bitter). Skim at the beginning.
  6. Strain through a fine chinois, pressing the shells well. Keep warm.

If you have prawn heads or monkfish bones in the freezer, add them. A fumet never has too much flavour.

Step-by-step preparation

  1. Sauté the vegetables (15 min). In a wide, shallow pan (28-30 cm), EVOO and the very finely chopped onion with a pinch of salt. 8 minutes over medium heat until translucent. Add the chopped garlic and the green pepper in brunoise, 5 minutes more. It should be well softened, without dark colour.
  2. Sear the lobster (3 min). Raise the heat, add the medallions and the claws, sear 90 seconds per side. Remove to a plate. The meat should not be fully cooked here, just take on colour.
  3. Add the tomato (10 min). Pour in the grated tomato and a teaspoon of salt. Cook until it loses its water and you see red oil separating, about 8-10 minutes. This point is key: poorly reduced tomato = watery rice.
  4. Pimentón and toasting (2 min). Off the heat, add the pimentón de la Vera and stir for 20 seconds (if it burns, bitterness is guaranteed). Add the rice and toast it for 2 minutes, stirring, until the grains shine.
  5. Wine and brandy (2 min). Pour in the white wine and the remaining 30 ml of brandy, let the alcohol evaporate.
  6. The broth (minute 0). Pour in the 1,440 ml of boiling fumet all at once. Add the toasted saffron crushed in a mortar. Adjust the salt now: the broth should taste slightly salty, as the rice absorbs.
  7. High heat (minutes 0-8). High heat, a lively boil, no stirring. This sets the starch on the surface of the grain.
  8. Medium heat (minutes 8-15). Lower to medium. Return the lobster and the reserved juices to the pan.
  9. Final point (minutes 15-17). Taste. The grain should be whole but not crunchy in the centre. If you use bomba, 17 minutes total is the point. Turn off the heat.
  10. Rest (2 min). Cover with a cloth, not a lid (it condenses and makes the rice soggy). Two minutes and to the table.

The total cooking time of the rice from when you add the fumet: 17 minutes for bomba, 15-16 for Bahía. Not one more.

Tricks for the creamy point

  • The coral in the last minute. If you have saved the coral from the head, mix it with a little hot broth and add it at minute 15. It gives colour, flavour and body.
  • Do not stir from minute 2. The starch released by the grain is what creates the creaminess. If you stir, the grain breaks and it turns to mush.
  • The broth goes in boiling. If you add it lukewarm, the temperature of the pan drops and the rice starts cooking late, throwing the timings off.
  • Serve immediately. Soupy rice keeps absorbing on the plate. If you leave it waiting 10 minutes, it arrives creamy bordering on dry. Diners seated before you turn off the heat.

If you are interested in the other end of the rice spectrum, a well-executed dry rice, take a look at the Valencian paella with its ratios of rice, broth and socarrat: same product, opposite philosophy.

Pairing and service

In a deep plate, always. One lobster medallion and half a claw per diner, the rest of the broth with a ladle. On the side, country bread for mopping up (yes, it is allowed).

For wine, a Albariño DO Rías Baixas with a couple of years in the bottle handles the iodine of the fumet well. If you prefer red, a young Mencía DO Ribeira Sacra, fresh and low in tannin. No powerful reds: they mask the lobster.

For dessert, something light. Fruit in syrup or a sorbet. After this rice, a flan is overkill.

Frequently asked questions

Can I use squat lobsters or langoustines instead of lobster? Yes, and it works well. Keep the total weight of shellfish (about 1-1.2 kg between heads and bodies) and make the fumet the same way. Squat lobsters actually make a brilliant fumet.

How long does it keep in the fridge? 24 hours in an airtight container, but the rice will have absorbed all the broth. When reheating, add 150-200 ml of hot fumet per portion and stir gently. It is not quite the same as freshly made, but it does the job.

Can it be frozen? I do not recommend it. The grain breaks when thawed and the lobster loses its texture. If you have leftover fumet, that one you can freeze: in jars it keeps for 2 months.

Does it contain gluten or dairy? It contains neither gluten nor dairy naturally. Main allergen: crustaceans (lobster). If you use a stock cube to boost the flavour, check the label.

How much rice per person? 80 g per diner is the standard as a main course. If it is a second course or there are many starters, reduce to 70 g and adjust the broth keeping the 4.5:1 ratio.
